Denver Omelets

Filling for3people: Filling for4people:

2 tsp. margarine 3 tsp. margarine

3 Tbsp. minced onion 4 Tbsp. minced onion

¼ C. + 2 Tbsp. diced green pepper ½ C. diced green pepper

3 Tbsp. diced cooked ham 4 Tbsp. diced cooked ham

  1. In large frying pan, sauté onions and peppers in margarine for 2 minutes on medium-high.
  1. Add ham and continue cooking another 3 minutes or until vegetables are softened but not too browned. Stir frequently.

***If someone in your group does not eat ham--- 1. sauté all of the veggies.

2. take their portion of veggies out of the pan and

put them aside in a small bowl.

3. add ham to the pan, sauté for a minute.

  1. Set pan aside. Push the filling apart in the pan so there is one portion for each

person in your group.

Omelet :

**** Each person makes their own omelet. Use1 egg, 1 tsp. margarine, and 1 slice cheese.

  1. On medium heat, melt margarine in small 8” frying pan. Use plastic spatula to spread the melted margarine around the bottom of the pan.
  1. Crack the egg into a custard cup. Mix gently with a fork to break up the yolk. You may add 1 tsp. milk to the egg if desired.
  1. Pour egg into the pan. Carefully tilt pan so egg covers the bottom of the pan.
  1. Gently lift edge of cooked egg to let uncooked part run underneath. Let omelet cook for a few seconds or till omelet looks mostly thickened and not runny.

5. To finish your omelet:

For softer-set omelet: / For well-done omelet:
Spoon one portion of filling onto omelet and top with a slice of cheese. Cover pan with a lid for 20-30 seconds so cheese melts. Make toast now. Fold ½ of omelet over onto the other half. Slide omelet onto a plate and serve with toast.
Wipe the pan with a dry paper towel. Enjoy!! / Run spatula around edge of omelet, put spatula under most of the omelet, and flip it over into the pan. Spoon one portion of filling onto omelet and top with a slice of cheese. Cover pan with a lid for 20-30 seconds so cheese melts. Make toast now. Fold ½ of omelet over onto the other half. Slide omelet onto a plate and serve with toast. Wipe the pan with a dry paper towel. Enjoy!!
