Catering Services Supervisor - Ely Cathedral Enterprises
We are seeking to appoint an enthusiastic and motivated person to take on the role of Catering Services Supervisorat Ely Cathedral.
The Catering Services Supervisoris a new role that has been created to maintain continuity amongst the keycatering activities at Ely Cathedral. The position will include skills in both hands on catering and administration.
The role willprimarily be responsible for the day to day operational running of the Refectory Café, and the occasional ad hoc private hire evening dining The Almonry restaurant.In addition to providing a smooth, efficient and cost-effective food service, the Catering Services Supervisorwill be responsible for ensuring there is basic good quality provision of home-cooked produce on a daily basis and excellent customer service.The role will also involve someresponsibilitiesfor staff associated with the Cathedral’s catering businesses.
The Refectory Café is a small friendly café located inside Ely’s magnificent mediaeval Cathedral. It has 34 covers, with additional exterior seating during the summer months. The Refectory currently opens daily 10am – 5pm (4pm in the winter) and offers morning refreshments, light lunches and afternoon teas. Customers include Cathedral visitors, local residents, staff and volunteers. It is a highly seasonal business with summer months being the busiest period.
The Almonry Restaurant already operates a very successful daytime business. The areas the Catering Services Supervisor will be involved in is overseeing any ad hoc evening trade, which will encompass the occasional pre-concert supper and any evening private hire enquiries.
Duties & Responsibilities:
- Ensuring the Refectory Café business is operational and properly managed on a daily basis.
- Taking responsibility for completion of daily records for health and safety in line with Food Standards Agency requirements.This will include maintaining and updating allergen records and preventing cross-contamination.
- Ensuring there continues to be a high standard of food offering and good quality manufactured produce at all times.
- Managingall staff assigned to the Catering Services Supervisor,including staff rotas, timesheets, trainingand holidays.
- Ensuring food safety guidelines are monitored and practiced at all times.
- Ensuring that catering services provide a warm and welcoming environment at all times and that customer service is efficient and outstanding. This will involve trainingfront of house assistants and any additional staff.
- Ensuring high levels of cleanliness and hygiene are met at all times in line with the Food Standards Agency and the Environmental Health Officer.Ordering and storage of food, beverages and cleaning products, and maintaining adequate stock levels.
- Working with the team to devise new menus, new product offerings and ensuring they are promoted and priced accordingly.
- Holding regular staff meetings as appropriate and attending management team meetings as required.
Person Specification:
- You will havegood food preparation and cooking skills gained in a catering establishment, to ensure fresh food is produced daily to meet the current standard.
- You will have experience in training staff members in food preparation and cooking.
- You will have managerial experience within a catering environment.
- You will have an up-to-date certificate in Food Hygiene.
- You will be innovative and creative with a view to introducing new ideas and processes.
- You will have excellent customer service skills.
- You will have the ability to cope with varying workloads whilst remaining calm and focused during busy periods.
- You will have a pleasant personality with a sense of humour and the ability to establish a rapport with a wide cross section of society.
Hours:
This is a 40-hour week position and will involve some weekend days and some evening work as and when required. This position will report directly to the Commercial Director.
