Recipe of the month from Lindy Trautman – Lasagne Rolls
8 lasagne noodles
1 pkg. (10oz.) frozen chopped spinach, thawed
1 C. grated parmesan cheese
1 1/2 C. part skim ricotta cheese
1/4 t. ground nutmeg
1/2 t. salt
1/4 t. pepper
mozzarella cheese for topping
2 C. spaghetti sauce
Cook noodles according to pkg directions. (I cooked them until soft) Drain, rinse under cold water, and drain again. Squeeze out as much moisture from spinach as possible. Stir together spinach, 3/4 c. of parmesan cheese, ricotta cheese, nutmeg, salt, and pepper. Spread about 1/4 cup of spinach mixture along entire length of each noodle; roll up noodles. Stand rolled up noodles on end and slightly apart in greased 9'x13' baking dish. Pour spaghetti sauce over noodles. Bake, covered at 350 degrees for about 30 - 45 minutes. Sprinkle with remaining 1/4 cup parmesan cheese and mozzarella cheese.
(The recipe was doubled for the meeting).
