JOB ADVERTISEMENT: CHEF

POSITION SUMMARY: The Corporate Chef is directly responsible for implementing and following quality culinary standards and overseeing the culinary operations in the Residential Group Home, as well as the internal catering needs of the organization. Responsible for supervising all kitchen functions including menu preparation, food purchasing, food preparation and maintenance of quality standards; sanitation and cleanliness. Ensures that residents are served attractive and nutritionally balanced meals for the residents, promoting and reinforcing good nutritional habits; trying new foods, portion control and a balanced diet 7 days per week, in addition to teaching life skills and role modeling appropriate behaviors

KEY RESPONSIBILITIES:

Manage day-to-day culinary operations for the organization

Execution of Daily Food Service, Quality, Technique, Portion, Presentation and Food Cost Control

To plan and provide nutritious meals to all residents on a daily basis, ensuring food purchased is fresh and within budget

Ensure all health and safety and environmental health standards are achieved and maintained

Track food costs while managing vendors to provide Standard Cost-efficient Products

Estimate Food Consumption and Requisition of Food Purchase

Standardize Production Recipes to ensure consistent quality

Responsible for monitoring and recommending all the kitchen equipment repairs and purchasing

Works closely with clients to teach basic cooking and menu planning skills; assists clients in taking responsibility for meal time functions. Specific responsibilities include, but are not limited to, the following:

  • Coordinates menu planning; Assists in purchasing of food items for the agency on an as needed basis.
  • Follow standardized recipes in the preparing of main entrees, vegetables, soups, starches and desserts. Minimize waste.
  • Establishes a workflow for the preparing of menu items that will be completed by specified meal times. Assists residents in preparation, serving and clean-up.
  • Adheres to all sanitary regulations regarding the proper handling of food.
  • Properly cools, covers, labels and dates, and stores food items that are left over.

Execute all on-site catering that requires planning and preparation; Menu planning and costing for Special Event Catering; Prepares for special catered functions for agency, as needed. At minimum, the monthly all-staff meetings and board meeting.

Work hours will typically be Monday through Friday, 10am-6pm. However, it is the responsibility of the Corporate Chef to ensure the group home residents have hot, freshly prepared meals every day, including holidays

Requires a high-school diploma or GED and must be a Certified Chef. A minimum of three years’ experience working with at-risk youth and children. Must have Safe Serve or related certificate.

Must have a valid PA driver’s license; PA Act 33 (Child Abuse) / Act 34 (Criminal History) / Federal Criminal History Record (FBI Fingerprint) clearances.
