KEY DUTIES:
The Food & Beverage Director contributes to Argyle’s success by leading the Food & Beverage management team to ensure our members, guests and banquet clients are provided with a high quality dining experience. The Food & Beverage Director will also work closely with the Social Committee to create exciting events that are fun for members and guests of all ages. Duties of the Food and Beverage Director are as follows:
  • Develops an operating budget for each of the department’s revenue outlets; after approval, monitors and takes corrective action as necessary to help assure that budget goals are attained.
  • Assures that effective orientation and training for new staff and professional development activities for experienced staff are planned and implemented.
  • Inspects to ensure that all safety, sanitation, energy management, and preventative maintenance standards are consistently met.
  • Helps plan and approves external and internal marketing and sales promotion activities for the food and beverage department.
  • Helps plan and approve the staffing and scheduling procedures and job description/specifications for all department staff.
  • Manages the long-range staffing needs of the department.
  • Approves the menus proposed by the Chefs for all outlets and special events.
  • Continuously evaluate and establish pricing of food and beverage that balances the reasonable expectations of members and clients with the budgeted cost of sales.
  • Ensures that all legal requirements are consistently adhered to including wage and hour, federal, state and/or local laws pertaining to alcoholic beverages.
  • Researches new products and develops an analysis of the cost/profit benefits.
  • Maintains food and beverage personnel records.
  • Develops and implements policies and procedures for food and beverage departments.
  • Monitors purchasing and receiving procedures for products and supplies to ensure proper quantity, quality and price for all purchases and continually monitors inventories with real time tracking to minimize over-ordering/under-ordering, theft, and cost of sale targets.
  • Reviews new techniques for food preparation and presentation in a manner and variety to maximize member and guest satisfaction and to minimize food costs.
  • Greets guests and oversees actual service on a routine, random basis.
  • Helps develop wine lists and bottle/glass wine sales promotion programs.
  • Ensures correct handling procedures to minimize china and glassware breakage and food waste.
  • Addresses member and guest complaints and advises the Club Manager about appropriate corrective actions taken.
  • Develops interesting ways of promoting club functions in the dining areas.
  • Prepares profit/loss analysis of specific club and banquet functions to assist in evaluation of event success and future event pricing.
  • Serves as an ad-hoc member of appropriate club committees.
  • Assists in planning and implementing procedures for special club events and banquet functions.
  • Maintains appearance, upkeep and cleanliness of all food and beverage equipment and facilities.
  • Monitors employee dress codes according to policies and procedures.
  • Approves all non-food invoices before submitting to the accounting department.
  • Manages physical inventory verification and provides updated information to the accounting department.
  • Responsible for the proper accounting and reconciliation of the point-of-sale systems and member revenues.
  • Maintains records of special events, house counts, food covers and daily business volumes.
  • Ensures that an accurate reservation system is in place.
  • Audits and approves weekly payroll.
  • Approves all entertainment.
  • Ensure timely correspondence with all catering guests including inquiry, follow-up, contracts, billings, collections and thank you letters.
  • Oversee banquet operations to achieve the highest level of client satisfaction and retention.
  • Complete periodic china, glassware, and silverware inventories.
  • Implement and monitor sanitation and cleaning schedules.
Salary/Benefits:
Salary range $65,000 to $75,000. Benefits include paid vacation, sick and personal leave, employee meals and golf privileges, health insurance,401(k) plan, dues for CMAA/NCCMA,and expenses to attend local and national continuing education.
Requirements:
  • College degree preferred, but not required
  • 5+ years of related experience in F&B Management
  • Previous private country club experience preferred
  • Proven management and leadership experience
  • Knowledge of federal, state and local health regulations and liquor laws
  • Excellent written and verbal communication skills
  • Must be highly organized with a keen eye for details
