Deep Fryer Use & Operation

BE fully trained in the use and maintenance of your deep fryer

BE aware of correct oil levels and temperatures

ENSURE that oil does not overheat. Follow manufacturer’s recommended cooking temperature.

Our food product cooking temperatures are already set on the fryer.

CLEAN away any grease surrounding the fryer floor area with warm water and detergent as soon as possible

USE salt or sand on large spilled grease that cannot be cleaned up immediately. Remember to also put out the yellow wet floor sign immediately to advise others of the spill.

TURN OFF the source of heat immediately in the event of an emergency

IN THE EVENT OF A FIRE, cover the flame with the fryer lid, or use the correct fire extinguisher.

DO NOT splash water on hot oil

·  Always put food in the fryer basket away from the hot oil. Do not drop food into the basket when the basket is sitting over the hot oil. This could cause serious burns and it also kills the lift of the oil.

·  Remove the basket away from the hot oil, and then put the food into the basket.

·  Put the basket of food slowly into the oil and push the required cook time button on the fryer panel.

·  When the button rings, this will require you to shake the basket. Lift the basket out of the oil slowly and shake the food in the basket carefully and then put the basket back into the oil slowing.

·  When the button rings for a 2nd time, the cook time has come to an end. The product button on the fry panel will be flashing showing you which food has completed the cooking cycle.

·  Lift the basket of food out of the hot oil, slowly, place the basket on the holding bar of the fryer to allow the food to drain of the oil.

·  After 30 seconds, remove the basket of food from the holding bar, shake the basket lightly and then dump the basket of food into the fry station holder.

·  Do not attempt to pack the food into the boxes over the fryer. The food could fall into the fryer and cause you a serious burn.

·  Always remove the basket away from the hot oil before packing.
