Inglewhite Crumbly Lancashire

A lovely example of Lancashire’s famous cheese made, in the traditional way, from cow’s milk from one days milking. This is a young, fresh cheese with a crumbly yet moist texture. The flavours are tangy and lemony with a unique creaminess. Deliciously moreish.

Parlick Fell

A sheep’s milk cheese made in the Lancashire style. The milk comes from Simon Stoot’s sheep at Bleasdale near Chipping and is made into this wonderful cheese at Singleton’s dairy in Longridge. Sweet and mild when young, and tangy when aged with a lovely firm waxy texture.

Bluemin White

Made by the Bell family at their dairy near Thirsk in North Yorkshire. This blue mould ripened ‘brie type’ cheese is blue on the outside but buttery and creamy on the inside especially when it has been left to age a little. Oozing with milky goodness it has a rich nutty flavour with a melt in the mouth texture.

Ribblesdale Mature Goat

A sweet, nutty flavoured goat cheese with a dense firm texture and salt crystals. Made in a Dutch gouda style and as the curds are washed with warm water in the cheese vat some of the strong goat flavour is taken away leaving a richer sweetness, which has to be tested to be believed. Goats cheese but not as you know it.

Smoked Traditional Lancashire

The Kenyon brothers at their Dew-Lay dairy near Garstang made this fantastic cheese by mixing curd from two consecutive days milking giving this cheese a smooth buttery texture. The cheese is then lightly smoked over oak shavings, which gives an unusual twist to a wonderfully tasty cheese.
Blacksticks Blue

The Butler family from Inglewhite in the heart of Lancashire have been producing this excellent blue cheese for a number of years with a huge success. A classic example of modern British blue cheese with its unusual orange paste and blue veining. The texture is semi soft and buttery when ripe and the flavour not too overpowering. A favourite on any cheeseboard.
