/job description
To deliver a healthy two course meal for up to 60 users of our iPlan Service. To provide tailored menus to those with specific dietary requirements. Monday-Friday 9-4pm.Reporting to the Service Manager. /

routines
Daily routines· Kitchen set-up & closedown.
· Food preparation.
· Taking in and checking deliveries. Daily ordering to par levels before supplier cut-off time.
· Completing daily cleaning schedule.
· Completion of temperature record forms twice a day.
· Staff briefing and debriefings.
· Preparation and serving of 60 two course meals per day and additional meals which cater to the specific dietary requirements of the service users.
· To provide a limited café service in the afternoons for building users and visitors.
Weekly routines
· Rota planning.
· Deep clean.
· Weekly seasonal specials planning.
Monthly routines
· Auditing health & hygiene. Monitoring of stock & order systems.
· Monitoring of cleaning rotas. Monthly kitchen staff meetings
Measures of success
· Happy & efficient teams.· Quality menus

Responsibilities
THIS POST IS DIRECTLY RESPONSIBLE FOR THE WHOLE KITCHEN OPERATION, BELOW OUTLINES THE BASIS OF RESPONSIBILITY.
Food to specification
Ensuring that food is consistent, attractively presented, properly portioned and served at the right temperature in line with menu descriptions.
Food costs
To ensure accurate control of costs through: efficient stock control processes, using par levels to order stock, buying seasonally, checking in deliveries, proper refrigeration, freezing procedures and dry storage, portion control and minimisation of wastage
Health & safety systems
To ensure the kitchen, equipment and working practices conform to Health & Safety Regulations.
Developing Service Users and Staff
To include and train service users in basic food preparation skills and kitchen routines.
Staff Management
The post will be directly managing one other staff member.
Multi Site
To support chefs in other kitchens to devise menus, control ordering and offer general advise and support.
