PRICE, Jan.1st, 2015(up only $.25 since 2012): Whole or ½ Beef= $4.00/lb. hanging wt.

We will haul your steer to Steves Meat Market in Desoto, Kansas, for processing. You pay usthe above stated hanging wt. price times the weight of either the 1 /2 or whole beef, whichever you choose to get. The sales tax is on top of that. The hanging weight is determined by Steves. (An average live steer usually “hangsout”around 500 lbs.) You pay Steves 55 cents per pound, hanging wt., for processing (cutting,wrapping, & quick-freezing). The only other charge is a slaughter fee which is $45 for a whole beef—$22.50for ½ (side) of beef. How much meat you get, in pounds,will depend on how much bone you choose to get in your cuts. Steves will work with you on that—if you want more hamburger, you may want to cut down on some of the roasts. If you don’t have much freezer space, you may want to have more of the meat boned out—like instead of Porterhouse or T-bone steaks, choose K.C. strip steaks filets. Instead of rib steak you might choose ribeye steak! If you have plenty of freezer space, be sure to ask for soup bones and get more cuts with the bone in, If that is what YOU would like. You may also want some stew meat. You can see it is hard to figure exactly how much beef in lbs. you will receive---not knowing how much bone will be included.

We like the beef to dry age (hang) for 14 days. You will be maileda letter and Steves’ card, with the number of your beef on it, the dayafter it is hauled. I call Steves the afternoon we haul and find out the hanging weight of your beef. I will then go ahead and figure what you owe us and include an invoice with our letter. When you receive this letter, it will tell you when to call Steves to tell themexactly how YOU want your beef cut. With ordering ¼ beef, there are not as many options, as to the cuts you get. See “Ordering ¼ Beef” on the website. If you have time, take a trip to Steves and personally talk with them about the cuts of beef you prefer! We ask for a $100deposit when you order your beef from us and need to receive your final payment before you pick up your beef from Steves-- unless you make prior arrangements with us.
