REPORTS TO:Planned Activity Group & Centre Based Day Respite Coordinator

POSITION OBJECTIVES

To co-ordinate the Planned Activity Groupkitchen to ensure the provision of nutritional, culturally relevant and well presented food to participants and that all foodservices meet all legislative requirements, standard guidelines and Fronditha Care’s policies. The Cook must, at all times, observe Occupational Health & Safety requirements, Food Handling & Hygiene Guidelines, Standards & Guidelines for Community Services and the Food Act 1984. In this role the incumbent is required to:

  • Provide nutritional, culturally relevant and well presented meals to the participants of the centre based group.
  • Ensure Occupational Health and Safety requirements are met at all times.
  • Ensure compliance with the Food Safety Program, Home Care Common Standards, Legislative Requirements and Fronditha Care’s policies.

DUTIES

  • Purchase food supplies, ensuring all incoming goods meet requirements and budget expectations.
  • Meet participants’ needs and choice on an ongoing basis in relation to food preparation, presentation and delivery.
  • Menu planning, including the incorporation of participants’ health and cultural wants and needs.
  • Ensure that food storage, food preparation and presentation is in accordance with the planned menus; food delivery and waste disposal occurs and meets all requirements as set out in legislation and Fronditha Care’s policies.
  • Ensure all kitchen equipment is maintained in accordance with OH&S requirements andmanufacturer’s guidelines, the Food Act and food handling regulations and guidelines.
  • Maintain the Food Service equipment inventory.
  • Fulfil responsibilities within the budget allocated by management, including menu planning, ordering and food costing.
  • Ensure the Food Safety Program is monitored and reviewed regularly.
  • Maintain and update knowledge base to ensure safe practice and effective performance in the workplace.
  • Attend relevant meetings such as Occupational Health and Safety Meetings and Staff Meetings and training.
  • Develop and review cleaning schedules for Food Services areas.
  • Actively participate in the continuous improvement process.
  • Assist the Coordinators in the development of relevant policies and procedures.
  • Facilitate the prompt and effective resolution of issues identified related to Food Services.
  • Adhere, at all times, to Fronditha Care’s Code of Conduct and Values.

Inherent Requirements of Position / Physical Demands of the Position
  • Plan, prepare and cook meals for residents in Fronditha Care facilities
  • Food preparation: cutting, chopping, slicing etc.
  • Loading and pushing food trolleys
  • Manually handling supplies, stores and food items in and out of kitchen
  • Loading and unloading dishwashers
  • Loading and unloading food in and out of commercial ovens
  • Transferring large cooking pots filled with food from stove to bench and sink
  • Maintaining cleanliness of kitchen including washing of pots and pans

KEY SELECTION CRITERIA

  • Demonstrated experience working as a cook in a commercial kitchen
  • Demonstrated Leadership and management of kitchen environment
  • Certificate in Food Handling
  • Knowledge of nutritional value of food
  • Food preparation and presentation
  • Ability to organize workload according to time and priorities
  • Knowledge of Occupational Health & Safety requirements
  • Excellent communication skills.
  • Ability to write and speak in English
  • Knowledge of the Greek cuisine
  • Maintains excellent health
  • Ability to meet the inherent requirement of the position
  • Certificate 111 in Home and Community Care an advantage
  • First Aid Certificate an advantage
