PURPOSE OF POST:

To provide High School catering services for up to 400 pupils, staff and visitors on a day to day basis according to the standards and range contained in the Service Level Agreement. To manage the kitchen and dining room/s in accordance with and to the standard required by LBC Catering Services Catering policy, meeting the requirements of National Nutritional Guidelines, Health and Safety and Hygiene legislation and best practice. To be responsible for an annual turnover of up to £100,000 and to provide special catering services to the school when required.

PRINCIPAL RESPONSIBILITIES:

1. / Supervise and assist with the provision of meals, including preparation, cooking, serving and cleaning. Deliver other catering services and special functions as required, in order to maximise income and customer satisfaction. / 35
2. / Organise kitchen staff to ensure all tasks are efficiently completed according to rotas, to keep hours worked within budget targets. Assist in assessing catering and staffing needs and participate in interviewing prospective kitchen employees. Implement the use of correct work methods and practice by all kitchen staff, to maintain the standards for kitchen and personal hygiene, general health and safety, this includes the training of staff as required. / 20
3. / Order all food and other commodities required in the kitchen and operate the stores, including stock control, commodity records and security. Ensure that the kitchen is correctly stocked with light equipment and first aid items. Control all expenditure to ensure it is in line with budget targets. / 15
4. / Plan menus and snack sales according to policy and the needs of the customer base, including those required for ethnic, vegetarian and other special dietary needs. Monitor sales of meals, snacks and issue of free meals, to ensure that the correct procedures are followed in the handling of cash or cash tickets, including the banking of monies. / 10
5. / Maintain the correct completion of all appropriate returns and records in accordance with current catering policy and the Council’s Financial Regulations to meet the required timescales and produce accurate accounts for income and expenditure. / 10
6. / Ensure that all equipment is kept in good safe working order and that repair and maintenance is carried out as necessary. Report any defects in the kitchen premises to the appropriate bodies and ensure the security of cash, stock, equipment and records at all times. / 5
7. / Liaise with the Headteacher and school staff in making sure the catering needs of the school are met and monitoring of the Service Level Agreement is satisfactory. Organise any catering support required for open days, parents evenings and other school events to provide full information of catering services available and maintain good relationships with customers. / 4
8. / Implement emergency feeding if required, to meet the needs of the community. / 1

DIMENSIONS:

Supervisory Management: Responsible for 1-2 Cooks and/or 4-9 General Kitchen Assistants, as appropriate

Financial Resources: Responsible for monitoring Kitchen allocated budgets for :-

Provisions, Cleaning Materials, Light Equipment, Milk sales, Free Milk, Snack sales, Staffing hours and Disposables, as appropriate. Responsible for cash floats £5 to £100 and cash income of up to £100,000 per annum.

Physical Resources: Responsible for :-

Security of Cash, Heavy and Light kitchen equipment, Monitoring Kitchen Premises Maintenance, Food and Cleaning Materials Stocks, Office and Dining room Equipment and Furniture and Cash Tills, as appropriate

Other: Responsible for managing the preparation and cooking of up to 400 meals and a la carte snacks on an average of 190 days per annum, in 1 kitchen with service of food from 1-3 locations. Other catering services as required, for example, breakfast, mid morning snacks, staff room trolley service, milk/drinks sales and vending services. Special Function catering when required.

CONTEXT:

This post will be responsible, under the direction of the Area Catering Manager, for providing catering services to the school. This requires efficient adherence to timetables, budget targets and a kitchen team which works cohesively together. It involves feeding school pupils and staff on a daily basis which requires an understanding of basic dietary needs and eating trends, in addition to the education culture under which the school operates. Where required the catering service will provide for ethnic minority cuisine, which is prepared, cooked and served according to the appropriate religious or cultural methods.

The Kitchen Manager will work together with the school in meeting the seasonal or curriculum requirements for catering e.g. packed lunches for school days out. A positive attitude to supporting school events such as open days, sports days, money raising functions is advantageous.

Because of the nature of this job, it will be necessary for the appropriate level of criminal record disclosure to be undertaken.
