Beginner: BAKED FRENCH TOAST

2 tablespoons butter or margarine2 tablespoons sugar

2 eggs½ teaspoon cinnamon

1/3 cup milk4 slices whole wheat bread

½ teaspoon vanillapowdered sugar

1. Preheat oven to 400 degrees.

2. Melt butter in 8” x 8” cake pan in oven. Tilt pan to evenly coat bottom of cake pan with melted butter/margarine.

3. Measure cinnamon and sugar into small bowl and mix well. Sprinkle evenly into bottom of cake pan.

4. With a fork or whisk, mix eggs and milk in a small mixing bowl until thoroughly combined. Dip each slice of bread in egg mixture to coat both sides and place bread in cake pan.

5. Bake in oven for 15-20 minutes. Let stand 1 minute.

6. Lift out and place sugar-side up on serving plate. Dust lightly with powdered sugar.

Intermediate: Buttermilk Corn Bread

1 cup all-purpose flour¼ teaspoon salt

1 cup yellow cornmeal2 eggs

¼ cup sugar1 cup buttermilk

2 teaspoons baking powder3 tablespoons butter, melted

1 teaspoon baking soda

  1. Preheat oven to 400 degrees.
  2. In a large bowl, combine the flour, cornmeal, sugar, baking powder, baking soda, and salt.
  3. In a small bowl, whisk the eggs, buttermilk, and butter.
  4. Stir into dry ingredients just until moistened.
  5. Pour batter into a greased 8-inch square, baking pan.
  6. Bake for 20-25 minutes or until top is lightly browned and a toothpick inserted near the center comes out clean.

Senior: TEA BISCUIT PIZZA

Crust:Topping:

2 cups all-purpose flour½ cup pizza sauce

3 teaspoons baking powder1 cup shredded mozzarella cheese

½ teaspoon salt½ cup pepperoni, browned ground beef, sausage,

1/3 cup chilled shortening or chopped ham

2/3 cup milk½ cup chopped green pepper (optional)

½ cup chopped onion (optional)

  1. Preheat oven to 450 degrees.
  2. Sift flour, baking powder and salt into a medium mixing bowl.
  3. Cut in shortening with a pastry blender or two knives until mixture has the appearance of fine crumbs.
  4. Add the milk, stirring with a fork, until the mixture forms a ball. (Too little liquid makes a stiff dough which will crumble or crack and too much liquid makes a sticky dough which is difficult to handle)
  5. Turn the dough out onto a lightly floured board. Knead until the dough is smooth (about 7 times).
  6. Place dough on a cookie sheet and press to form a large circle or rectangle about 1/3 inch thick. Pinch slightly at the edges.
  7. Spread dough with pizza sauce.
  8. Sprinkle with cheese, meat and other toppings.
  9. Bake for 13-15 minutes until crust is lightly browned.
