Banana Pancakes with Brown Sugar Butter

Now you have to make these pancakes they are the nicest recipe. We made them for fathers day breakfast and a fantastic hit with dad and the kids.

If you don’t want to use bananas when berries are in season or stone fruit substitute it with them.

Serves 4-5

1 egg

2 ½ cups Milk

25gm melted butter

2 small bananas, sliced (200gm approx) or another fruit

450gms Plan flour, sifted

1 tsp cinnamon

1 ½ Tbsp brown sugar

1 ½ tsp Bi-carb soda

1 punnet Strawberries, 3 passionfruit, Brown sugar cream (recipe below) and Honey, to serve

Icing sugar to dust

Butter for cooking

Wash and cut the strawberries in ¼’s place in a bowl with passionfruit. Set aside until needed. Make the Brown sugar Butter and set aside also.

Place the sifted flour and Bi-Carb in a bowl, with a pinch of salt, sugar and cinnamon stir to combine. Make a well in the centre of the flour mix, crack the egg in with the oil and butter, Start to mix it in with a whisk then gradually add the milk. Keep putting the milk in the middle and slowly incorporating more flour whilst whisking. When it has all mixed together nicely, fold in the chopped bananas.

Pre-heat the oven to 100C.

Heat a large frypan over medium-low heat with 15gm butter. Pour 1/3 -1/2 cup of the batter into the pan, if you can fit more than one in easily do so. Let it cook until small bubbles start to appear in the mixture then turn over. Cook for another minute then place on a plate and put in the oven until all the mixture is made. Put another knob of butter in the frypan then repeat with the other mixture, place in the oven on the plate adding a little butter each time until all the pancakes are finished.

To Serve:

Place the plates out on the bench and put one pancake on each place a teaspoon of the butter mix on all then put another pancake on top.( Depending on how many pancakes you have you can do another layer they are quite filling I found 2 was enough). Divide the strawberry mix on top of each pancake the a teaspoon of brown sugar butter on top drizzle some honey over the top then dust with Icing sugar. Who needs a restaurant this will look fantastic. Then serve

Brown sugar Butter

40gm Brown sugar

100gm Butter, Softened

Beat the Sugar and chopped butter with an electric mixer until light and fluffy, reserve until needed.
