This application is for new applicants who are requesting approval to sell processed meat products with meat ingredients from animals they grow.

Overview of Application Process

1. Local, State, and Federal Health and Food Safety requirements

Producers considering production of a processed food item or meat product should first consult guidelines and licensing requirements of local, state, and federal food safety regulating agencies.. Acceptance of any product by RMPE can only occur AFTER the applicant has satisfied all requirements for production facilities and food labeling laws as required by any local, state, or federal regulatory agency. RMPE cannot be responsible for the success or failure of your product once in production.

2. RMPE requirements and application form checklist:

The processed product meat vendor applicant will need to submit the following to a manager:

a. RMPE farm application (separate form)

b. Processed product meat application form (this form)

c. Samples of product they wish to sell at the market (manager will schedule this).

d. List of ingredients and sources (not needed if available on labels)

e. Copies of all required licenses and product labels (label must include "Produced on" date)

f. Liability insurance: The processed product meat producer is required by RMPE to carry general premise and product liability insurance of at least $1,000,000.00. If the product is approved, the vendor will then request that their insurance provider list RMPE as a Certificate of Insurance Holder, and send this certificate to RMPE. This certificate must be given or sent to the market BEFORE the product can be sold.

Specific requirements of the RMPE market for meat and processed products (sausage, etc) are outlined below.

Rules for Sale of Meat Products and Preserved Processed Food Products

1. Sale of Frozen Meat Products:

a. All stock held for sale shall have been raised by the vendor for at least 75% of the live weight. For stock purchased and then pastured on the vendors’ own farm or on legally leased land, the vendor must keep an accurate and updated livestock purchasing log available at all times for reviewing by the market management.

b. Vendors of frozen meats at the market must provide proof of approval of any farm plan and processing protocols if required by local county sanitarians and USDA-FSIS. The vendor must register the name, location and registration plant number of the processing facility(s) used to process their meats products. Any change in processing facility requires notification and approval of the local county sanitarian or USDA-FSIS and market management in advance of sales.

c. The vendor of frozen meats products is required by RMPE to carry general premise and product liability insurance of at least $1,000,000,00 per occurrence. Upon approval by RMPE, the vendor will request that their insurance provider list RMPE as a Certificate of Insurance Holder, and send this certificate to RMPE.

d. Vendors of frozen meat products must be able to show county health inspectors on site at market that the products remain frozen during market hours.

2. Rules for Sale of Processed Meat Products

a. The core or identifying ingredients of the processed product must be produced from raw materials grown or raised on the vendor’s farm or leased land.

b. The vendor shall have in place a Farm-produced Process Product Plan meets the approval of all licensing and labeling requirements of local, state, and federal food safety regulating agencies. This proof may be in the form of a documentation from the processor, or an actual food processor license, or an approved plan from above mentioned regulatory agencies. If a co-packer processes the product, the vendor must submit the name, location and registration plant number of the processing facility(s) used. If the vendor is working with the Food Innovation Center at UA, they will provide documentation that we can keep on file.
