Ingredients

1 lb extra lean ground beef
1 1/2 cups uncooked macaroni
4 Tbs ketchup
1/2 cup onion, finely chopped
1 med green pepper, chopped
1 1/2 Tbs Worcestershire sauce
1 16oz can tomato sauce
1 cup water
salt and pepper to taste
1 Tbs canola oil

Instructions

Brown the ground beef and drain off the grease, set aside. Cook the macaroni, onion and green pepper in 2 T of oil. Cook until onion is tender and macaroni is glossy. Return beef to skillet. Add tomato sauce, water, salt, pepper, Worcestershire sauce and ketchup. Cover and simmer 25 minutes on low heat until the macaroni is tender.

Meat Pie

Instructions

Brown meat. Saute onion and mushrooms with meat. Season with Salt and Pepper.
Layer meat on bottom of pie plate. Top with potatoes. Top mashed potatoes with soup.Then finish with cheese.
Bake until heated through. Broil until chesse is melted and starting to brown.

Chicken Lo Mein

Wendy's 6 Point Freezable Shepherd's Pie

Ingredients

10 medium carrots, peeled and cut into chunks
6 medium potatoes, peeled and cut into chunks
3 TBSP Smart Balance Omega Spread (regular)
1 can no salt added Del Monte Sweet corn
1 can no salt added Del Monte French cut green beans
1.5 lbs extra lean ground beef (7% fat)
Minced onions
Salt & Pepper to taste
13x7 pyrex (or comparable sized pan)

Instructions

(1) Place peeled carrot and potato chunks into slightly salted water and boil until fork can easily slide into carrots. Time varies.
(2) While carrots/potatoes are boiling, add minced onion (according to taste) to ground beef and brown the meat in a separate frying pan. Use a spatula to separate the beef into small bite-size chunks while cooking.
(3) After meat is browned, drain fat and layer meat at the bottom of the pyrex (or comparable) pan.
(4) Drain sweet corn juice from can INTO a cup and evenly spread drained corn in a layer over the ground beef.
(5) Do the same with the can of green beans.
(6) When carrots/potatoes are done, drain the water (I save this potato/carrot juice and freeze it for soup bases). Add the Smart Balance spread to the carrots/potatoes and mash, adding the water from the sweet corn can as needed.
(7) Using a large spoon, spoon the mash over the beef/corn/green bean layers in the pan. Smooth out as needed.
(8) Cook at 325 degrees until top begins to crust slightly.
When serving, add salt and pepper to each serving according to taste.

Laughing Cow Wontons

4 wonton wrappers (1.5 points - my brand is 3 pts. for 8 wrappers - found in produce section)
1 wedge laughing cow cheese

Instructions

Preheat oven to 350. Let cheese soften on top of stove while preheating. Lightly spray a small cookie sheet w/Pam. Spread LC cheese in middle of wrappers. Brush edges of wrappers w/water, and fold them over to make each one a triangle. Pinch edges to close each wrapper completely. Spray w/Pam.
Bake for 5 minutes, flip wontons over, back another 3-5 minutes until wontons are crispy

Blueberry Breakfast Biscuits correct recipe

2 cups oatmeal
3 T. Splenda sugar substitute
1 T. baking powder
2 T. unsalted butter
1 cup buttermilk
1 1/2 cups frozen blueberries

Instructions

Grind the oatmeal into a flour using your food processer. Combine the oatmeal flour with the Splenda and baking powder. Cut butter into small bits and add to mixture until it is crumbly then stir in buttermilk and fold in blueberries. Place abut 13 mounds on a baking stone or parchment lined baking pan. Bake at 400 20-25 minutes. You can sprinkle them with a little more Splenda after baking if desired. ** These are really yummy, I use an ice cream scoop to form them and gently push them together to form a ball before baking.

Cheesy Egg White Sandwich

Stir the rice and broccoli in the skillet. Reduce the heat to low.
Return the chicken to the skillet. Sprinkle the chicken with additional paprika and black pepper. Cover and cook for 5 minutes or until the chicken is cooked through and the rice is tender.

French Toast w/ Cream Cheese Topping

1 egg (large is ok)
1/2 Cup fat-free Skim Milk
1 TBSP preserves (I use homemade, with just a little sugar)
3 Slices light-whole wheat bread. (I used Schwebels and let it sit out a little to get a little dry)
1 container of Weight Watchers Cream cheese. ( of course this is the little container, not one of the big ones)

Instructions

Whisk egg and milk. Heat non-stick pan just until hot. Dip the bread in the egg mixture and soak it up evenly between the three pieces. Brown on both sides and make sure it is hot. For the topping mix cream cheese and preserves. If too cold to mix, microwave for a few seconds. Top each toast piece with 1/3 topping. Serve immediately. ** If you want a crispier toast add some oil to the pan and adjust your points. I like to use non-processed foods so I stay away from egg substitutes, and with this one, if you use just the egg white.. what will you do with that yoke?

Italian Meatballs

Instructions

Cook the chicken by whatever method you prefer--baked or grilled. Meanwhile, chop the onion, tomato and lettuce for topping. Arrange the chips on a baking sheet. Shred the chicken. Combine with taco seasoning, chicken, black beans and cheese in a bowl. Mix the ingredients and top the chips with the mixture. Bake for 5-7 mins at 400 degrees or until the cheese is melted. Top with onion, tomato and lettuce. Dollop on the sour cream. Enjoy!

Garlic Cream Cheese Stuffed Chicken

Preheat oven to 350 degrees
Tenderize the chicken - pounding it thinner

3. Stir in the cooked macaroni,ham,and frozen veggies. Transfer mixture to a 1-quart casserole. Toss together the bread crumbs and the 1 tablespoon melted margarine or butter. Sprinkle bread crumbs atop the macaroni mixture.
4. Bake in 350 oven about 30 minutes or till bubbly. Makes 4 main-dish servings.

French Onion Soup Coca-cola
