Lifecycle Nutrition

COURSE DESCRIPTION

Lifecycle Nutrition: (3) (B.A.S., B.S.). This course addresses nutrient requirements, dietary adequacy, food habits, and special nutritional concerns during pregnancy, lactation, infancy, childhood, adolescence, and adulthood, including aging. Socioeconomic, cultural and psychological influences on food and nutrition behavior will be addressed.

COURSE PERFORMANCE STANDARDS

The student, at the successful completion of HUN 3403, should be able to:

1. Discuss the role of nutrition and changes in nutritional requirements that occur during the life cycle of humans.

2. Identify major areas of nutritional concern in each stage of the life cycle, including impact of physiological and developmental changes.

3. Relate methods of assessing dietary adequacy during pregnancy, lactation, infancy, childhood, adolescence, and various stages of adulthood.

4. Describe how dietary, biochemical, and anthropometric measures are used to identify nutritional risk factors.

5. Identify nutritional risk factors that may lead to chronic disease through case studies of individuals/families at various stages of the life cycle.

6. Delineate food habits during each of the phases of the life cycle.

7. Describe how the diet can be planned to meet nutrient needs during each stage of the life cycle.

8. Investigate socioeconomic influences on food and nutrition behavior.

9. Articulate how culture influences food and nutrition behavior.

10. Discuss psychological influences on food and nutrition behavior.

11. Interpret research literature related to nutrition in the life cycle.

12. Select and use relevant literature to enhance learning and support written work.

13. Demonstrate increasing ability to write in a scholarly manner.
